1. very little, it's recycled
2. I can't give you a figure; but I was there recently and wondered the same thing. It seems a terrible waste. On the other hand it adds immensely to the whole atmosphere. Vegas would be pretty drab without it.
3. In many 'features', the water just goes back into a tank at the bottom and is continuously fed into the pipes that are above them. I suppose they refresh the water sometimes, but it is not all going down the sewer lines I assure you.
